Parkour servers are collections of jump courses ranked by difficulty. You play mostly alone against the clock, from easy beginner maps to courses that take hours of practice, and the size and quality of the course library matter far more than the player count. A good parkour server is worth it even when you are the only one online, as long as the courses are well built and fairly scored.
Check the number of courses, the difficulty tiers, how checkpoints work and whether there are leaderboards for each course.
